Breakfast Hash is something I discovered several years ago during a round of Whole30. My husband was so tired of eggs (weird, I know!) so I needed something we could both eat and that I could still put an egg on. This fit the bill and now my daughter loves this an an alternative to her gluten-free waffles. And, you can use any veggies you want so customize it to your palette.

This comes together so much faster using my microwave. I know, I know, it sounds crazy. But, I have the Anyday bowls and they are an incredibly helpful tool in the kitchen. Who knew microwave cooking could be so cutting edge? While the sausage was browning along with the onion I diced up a sweet potato, two carrots, and two small parsnips. If you can, try to make the dice roughly the same size so they cook in the same amount of time.

I popped the veggies into my Anyday bowl and microwaved it for five minutes. Once that was done it went in the air fryer (an oven at 400 works too) for ten minutes to crisp up. I added it to the sausage mixture and stirred in chopped spinach. No need to cook the spinach the heat will wilt it. Add salt & pepper to taste. I like to put a fried egg on top but you don’t need to.

Ingredients:

1 lb. bulk Italian Sausage (I like Isernio’s)

1/2 yellow onion, diced

2 small carrots, diced in 1/2” cubes

2 small parsnips, diced in 1/2” cubes

1 med. sweet potato, diced in 1/2” cubes

1 lb. spinach or kale, or any leafy green you love

Salt & Pepper to taste

1 egg, optional for topping

Method:

Over medium heat, brown sausage breaking up pieces as you go. Add onion when there is still some pink left and saute until translucent. Turn off the heat and cover.

Meanwhile, add veggies to your Anyday bowl and microwave on high power for five minutes. You may have to do this in batches. If you aren’t microwaving you have two options:

  1. Roast the veggies in a 400 degree oven until you can pierce them easily with a fork.

  2. Par boil the veggies until you pierce them easily with a fork then place in oven or air fryer to crisp.

I add the steamed veggies to my air fryer to get crispy around the edges but if that’s not your jam, don’t do it. Afterall, it’s your breakfast.

Once the veggies are crispy add them to the sausage and onion mixture. Add the spinach and mix to combine. If you’re using a heartier green like kale you may have to turn your stove back on for a minute or two.

This is a perfect meal-prep item so you can have it for several days during the week.
