Garlicky Kale Sald

Kale salad with the most delicious, garlicky dressing.

Remember when Whole Foods had that addictive kale salad in their salad bar; like ten years ago? This is it.

I stood at the salad bar, took a photo of the ingredients, and then googled nutritional yeast because I'd never heard of it. I LOVED that salad and wanted to re-create it at home. It took a lot of tinkering (and garlic) but I figured it out. I've been eating it forever and it's time you did too.


You can make this salad a day ahead of time. The kale will be much softer but still have great flavor. I sometimes use the dressing as a dip for veggies too!

1-2 bunches of kale. Washed, de-stemmed, and roughly chopped

Dressing Ingredients: I’ve linked the products I use at home
2 tbsp fresh lemon juice
2 tbsp soy sauce or tamari (we use San J tamari b/c it’s gluten free)
2 tbsp apple cider vinegar (we use Bragg’s ACV)
2 heaping tbsp tahini (I love Soom Foods)
2 tsp garlic or more (I use about 4 large cloves) Roughly chopped or minced
4 tbsp nutritional yeast

Blend it all together, scraping down the sides at least once. My immersion blender came with a small bowl attachment so that's what I use. A mason jar and an immersion blender or a regular blender work great too.

Add a bit of dressing to the bottom of a bowl. It will be thick. Add in some kale and more dressing on top. Mix really well, making sure to get it in all the crags of the kale. I like to make this first while I get other things ready and let the dressing sit on the kale to soften it.
