Salmon Power bowl

I was in Leavenworth, WA for a work retreat last week and had lunch at this charming restaurant, Yodelin Broth. I ordered a salmon bowl and it was so delicious. I decided to recreate it at home and use up what I had in my pantry.

I love colorful and super flavorful food. I get bored quickly if I eat the same things over and over again so I’m constantly changing things up in my kitchen. Although I do plan out meals for the week I often prep ingredients for lunches and see what happens. I had a delicata squash that had been in my pantry for a couple of weeks and a small sweet potato so I roasted them up quickly in a 450-degree oven. I like a little char, it adds more flavor.

I buy wild, frozen salmon at Whole Foods for moments like this. And, using my Anyday Bowls I’m able to microwave my fish. I know, sounds crazy, but it’s delicious. I lean on this microwave cookware ALL THE TIME.

In this bowl I used massaged kale (olive oil & salt and get in there with your hands), quinoa, roasted delicata & sweet potato, wild salmon, pickled onion, and sesame dressing. Find the dressing recipe here!
