Black Beans & Rice

Ingredients

2 tbsp extra virgin olive oil or avocado oil, divided

2 (15 oz cans) black beans, rinsed and drained

1 C uncooked long-grain white rice

1 onion, chopped

1 tsp ground cumin

2 C chicken or vegetable stock

Zest & Juice of one lime

Method

Heat 1 tbsp oil in a large saucepan over medium heat

Add onion, cumin, and 1/2 tsp salt, stirring occasionally until onions are translucent

Gently add the beans, rice, and stock, and stir.

Bring to a simmer, cover, reduce heat to low and cook for about 10 minutes

Remove the lid, stir the mixture then replace the lid for another ten minutes

Once rice & beans are cooked, add the zest & juice of the lime and stir to combine
