Cottage Cheese Breakfast Bowl
Cottage cheese is all the rage right now. I eat it a couple of times per week and I do like the Good Culture brand (and so does my daughter). I’ve been feeling burnt out on breakfast lately so I thought I’d make a savory cottage cheese bowl. Very little cooking is required and you can choose your own adventure with this bowl.
I had smoked salmon, eggs, arugula, tomatoes, and an avocado that had seen better days. I dug out pickled onions & capers from the fridge and I still have chives growing in the front yard. I put it all together to create this incredibly delicious and filling bowl!
Ingredients
110 grams of cottage cheese (one serving)
Two eggs, soft-boiled (or however you like them)
2-3 oz. smoked salmon
Handful of cherry tomatoes
1 C arugula, loosely packed
1/4 avocado
1 tsp capers, drained
1-2 tbsp pickled onions
3 chives, snipped
Crunchy salt- to taste
Aleppo Pepper- to taste
Method
Cook your eggs. I bring a small pot of water to a boil with a splash of white vinegar. Add eggs once boiling and turn the heat down slightly. Boil for 7.5 minutes and transfer to an ice bath
While the eggs are cooking assemble everything else.
Slice the tomatoes then salt & pepper them, let them hang out while you assemble the bowl
Add your cottage cheese to the center of the bowl. I pepper mine.
Flake the salmon into the bowl.
Slice the avocado & add
Add arugula (I tossed mine with red wine vin)
Peel your eggs and slice in half. I topped mine with crunchy salt & aleppo pepper and add to your bowl
Top everything with capers, chives, and pickled onions
