Back with a bowl! My favorite parts of this bowl are the seasoning for the chicken and the dressing I use. I may occasionally eat a couple of spoonfuls of this lime vinaigrette.

The great thing about building a bowl is people can take or leave what they wish. No one has to eat anything they don’t want to. And, if you have kids like me that’s a plus.

So let’s get to it!

My Favorite Seasoning for Chicken

2 tsp Kosher Salt

2 tsp Onion powder

2 tsp Paprika

Mix all ingredients in a small bowl. Whatever you don't use store in an airtight container.

The Chicken:

If you have time marinate the chicken with the seasoning blend above. I like to use boneless, skinless thighs. I rub them with olive oil then rub in the seasoning blend. Marinate for as long as you can but no more than 24 hours.

Remove from fridge 30 minutes before cooking. You can grill, saute, or bake the chicken until an instant-read thermometer reads 165 degrees.

Let chicken rest for at least ten minutes before slicing.

Lime Vinaigrette

  • 1/4 C plus two tablespoons freshly squeezed lime juice

  • 1/4 C neutral oil (I use avocado oil)

  • 1 tbsp plus two teaspoons sugar

  • 1/4 C sour cream

  • 1/2 tsp Kosher salt

  • 1/4 tsp cayenne or more to taste

  • Dash of white pepper

I put all the ingredients in a mason jar and shake vigorously. Do what works for you.
