Sufganiyot (Israeli Donuts)

My kids were dying for Sufganiyot over their holiday break in December. Sufganiyot are Israeli donuts typically served at Hanukkah (because they are fried in oil). Usually for our Hanukkah party each year I have a few people grab a few dozen donuts. This year since it was cancelled and we had the time we decided to make our own. However, these presented a challenge for me because I have one kid with Celiac Disease. Finding a gluten-free donut is practically impossible but if I’m making something for my son I have to find its gluten-free counterpart.

For the regular sufganiyot I used this fantastic recipe from https://www.onceuponachef.com/recipes/sufganiyot-israeli-donuts.html This seems to a popular choice among my Jewish friends who have made them before and they turned out wonderfully. For the gluten-free version I used this recipe https://www.fodmapeveryday.com/recipes/jelly-doughnuts-gluten-free/ I use King Arthur gluten-free flour because that’s my daughter’s preference. They tasted pretty darn similar to the real deal.

Since I did a bunch of preserving this past summer we used a few different types of jam and lemon curd to fill them. We all agreed that we could have used more jam inside but I didn’t want them to burst. Now it gives my kids an excuse to dip on the side because who wouldn’t want more homemade jam?
