CHOP CHOP SALAD
Easiest weeknight dinner ever.
I’m not kidding, this is so easy and I can pretty much guarantee everyone will love it. My kids ask for this salad every week. And, you can tweak and customize it so everyone is happy! My kids like to choose their toppings and off they go; no arguing which is a win for me. My kids even take it to school the next day.
One of my closest girlfriends gave me this recipe and we absolutely adore it in our house. What really makes this salad is the dressing. It’s a dreamy, creamy balsamic vinaigrette. You’ll need a baguette to soak up all the dressing. And, serve extra on the side.
Chop Chop Salad (adapted from San Juan Islands Cookbook II and Lisa!)
* Romaine lettuce
* Cherry tomatoes (I still had Sungolds from my garden)
* Bell Pepper
* Green onion (red works great too; my son likes both!)
* Good salami
* Roasted chicken (original recipe calls for Turkey)
* Fresh mozzarella (original recipe calls for Provolone)
* Garbanzo beans
Creamy Balsamic Dressing
* 1/2 C Mayo
* 1/3 C Balsamic Vinegar
* 1 clove garlic, minced
* 1 tbsp Dijon Mustard
* 2 tbsp fresh lemon juice
* 2 tsp oregano
* 1 tsp fresh ground pepper
* 1/2 tsp kosher salt
* 1/2 C Extra Virgin Olive Oil
