Tequila-Lime Chicken Nachos

Nachos is always a great choice

We love nachos in our house, I mean who doesn’t love nachos? These tequila lime nachos are a filling, easy, and quick weeknight meal. And, the wonderful thing about nachos is you can customize them to your preferences. Half of our sheet pan had onions & pickled jalapenos because my son and I love them; my husband and daughter not so much. I let everyone add their own salsa (I went without), and any other toppings they wanted.

Also, a hot tip for nachos, double layer of chips with cheese on both layers. I hate a soggy chip and I need cheese on all my chips.

Sheet Pan Tequila-Line Nachos

Ingredients

1 1/2 lbs boneless, skinless chicken thighs- diced into 1” pieces

1 tbsp extra virgin olive oil or avocado oil

3 tbsp taco seasoning (here’s a link to my 5-minute taco seasoning)

2 oz. Tequila

1 lime- juiced

3 C Shredded cheddar or any cheese you love

Tortilla Chips- enough to cover a sheet pan with two layers

Optional Toppings- guacamole, salsa, pickled jalapenos, onions, cilantro, beans, sour cream, lime juice

Method

Pre-heat your oven to 350

Chop your chicken, place in a bowl and then toss with taco seasoning

Pre-heat a large saute pan over medium-high heat

Add the chicken in an even layer, but don’t move it!

Once it’s cooked about halfway through, roughly 4 minutes, it should pull away from the pan easily. If it doesn’t, let it cook more otherwise you’ll rip the pieces

Once the chicken has been turned, add the tequila & lime juice to the pan

Let the tequila cook off and you should have fragrant chicken with just a little bit of sauciness. Turn off the heat

Meanwhile, add tortilla chips in one layer on a sheet pan & cover with approximately 1.5 C of freshly shredded cheese

Add another layer of chips on top then another layer of cheese

Add the chicken and any toppings you want cooked (I add raw onion here to let it cook just a bit)

Place the sheet pan in the preheated oven and let cook for about 7-10 minutes or until the cheese has melted but hasn’t turned crispy

Grab all your toppings, pop the sheet pan on the dinner table, and let everyone eat!

Notes:

If you don’t have tequila, don’t worry about it! Just use the lime juice

I like to shred cheese from a block. But, if you don’t have it on hand use any pre-shredded cheese you have. Freshly shredded melts better but your kids won’t notice the difference!

There are no rules with nachos. Want beans, add them, want corn, add it. Do what makes you happy!
