One-Pot Sausage Lasagna

We love lasagna in our house but I rarely have time to do it the “old-fashioned” way. This one-pot wonder is ready in less than thirty minutes, is high in protein, and will keep you full & satisfied. Everything is cooked in your Instant Pot and you have the option to finish in the oven. If you don’t have an Instant Pot, I highly recommend them. I use mine almost everyday!

To boost the protein I whip cottage cheese rather than ricotta, but if you love ricotta use it. I use my immersion blender and whip the cottage cheese right in its container. In this recipe, I used Hempler’s Ground Italian Sausage but you can swap in ground beef, turkey, or chicken. If you prefer you can do half sausage & half ground beef. That’s the beauty of this recipe, you can use what you have.

I finish mine by putting it all in a 9x13, topping with shredded mozzarella, and putting it under the broiler for a couple of minutes. It’s not necessary but you get the look of a regular lasagna. I serve this with a salad & garlic bread.

Ingredients:

1 lb. ground Italian Sausage

1 16 oz box of lasagna noodles, broken into 1 1/2 - 2 inch pieces (I use GF)

1 32 oz jar of your favorite pasta sauce

4 cups water

8 oz whipped cottage cheese or ricotta cheese

8 oz shredded mozzarella

Method:

Press saute on your Instant Pot

Add a tablespoon of olive oil

Once the Instant Pot reads “hot” add the sausage

Cook until sausage is no longer pink, hit cancel

Add the pasta, pasta sauce, and water

Close the lid, make sure the vent is set to seal, and cook for 6 minutes

When it’s done it will beep, use a quick release and wait until the pin has dropped before removing the lid

Stir in the whipped cottage cheese and half the mozzarella cheese

You can serve it now, it’ll be a bit runny but it’ll taste delicious! If you are serving now sprinkle the remaining mozzarella cheese.

Optional, my preferred method:

Pour the contents of the Instant Pot into a 9x13 baking dish

Sprinkle with remaining cheese

Broil for 2-3 minutes until cheese is bubbly & brown

Let rest for 5-10 minutes.
