Easy Weeknight Enchiladas

I am all about easy dinners during the week. As my kids get older I feel like I have LESS time not more. I truly thought it would be the opposite but nope! They are becoming people with their own lives, but they always need a ride somewhere. I’ve been working on recipes that taste great, can be done in less than one hour, and make leftovers. Although I’d love to make all my own ingredients; it’s just not a possibility right now. These enchiladas may not be authentic but they taste good; isn’t that what matters?

Ingredients:

Three chicken breasts

2 C chicken stock

20 tortillas, I like the Siete Foods Almond Flour Tortillas

2-3 tbsp sour cream

2 tbsp taco seasoning (use more if needed)

2 C shredded cheese, divided- I used cheddar & Monterey jack

1 28 oz can of enchilada sauce, red or green, whatever is your preference

Method:

Poach three chicken breasts- in a shallow pan add chicken then pour chicken stock/broth to almost cover the chicken. Cover the pan, turn on med-high heat, and cook for about 10-15 minutes depending on your chicken. I flip mine halfway. If you want to be fancy add a garlic clove or bay leaf. I did not.

Pre-heat your oven to 375.

Spray two 9x13 pans with non-stick cooking spray (I like @chosenfoods)

Once chicken is done transfer to a bowl and shred with forks (or your handmixer, I don't love it)

To the bowl add a couple of heaping tbsp of sour cream

About a tablespoon-ish of taco seasoning

And a cup or so of shredded cheese. I used Monterey jack and Cheddar. I shredded it while the chicken was cooking

Give it a good mix.

Wrap your tortillas in a towel and microwave for 30 seconds

Pour a little sauce onto a plate, dip the tortilla, then add the filling, roll it up, and put in the pan.

Continue this until you're out of filling.

Pour remaining sauce on top then top with another cup or so of shredded cheddar (I used Monterey jack)

Pop into the oven, covered, for 30 minutes.

Serve with your favorite sides; rice, beans, guac, salsa. Whatever your heart desires!
